Newfoundland shares its culinary history of enjoying salt cod with many other cultures. Bacalao (bak-al-OW) is the word used for cod or salt cod (in various spellings and pronunciations) throughout the Mediterranean. The versatility and much-beloved nature of this time-honoured staple is the inspiration for our name – and exemplifies our innovative interpretation of Newfoundland cuisine.

Our focus is on local produce, products and spirits.
In season, and as much as possible, we endeavour to source quality local ingredients from passionate producers…everything from garlic to game and seafood to spirits.

We give preference to locally produced or bottled spirits including Rodrigues, Auk Island
& Sapworld wines & spirits, Ragged Rock, Old Sam, Screech, Cabot Tower and The Newfoundlander rums, Charenac brandy, Newman’s Port, the Iceberg products, Amherst Gate rye & the Shiver products.

Our ‘Bacalao Blend’ coffee is roasted in Newfoundland by Jumping Bean Coffee.

All desserts are made in house.
(Some are topped with locally-made “Glenview’s Finest” old-fashioned scald cream!)

Every dish, dressing, sauce and chutney is made from scratch.

We use as much recycled and recyclable materials as possible, use enviro-friendly cleaning products.
We have found takeout containers that are fully compostable!

Our logo, whom we have affectionately dubbed “Old Salty” was a real 9-pound split salted cod. We photographed and immortalized him for all time.  And then we ate him… he was delicious!
